Crispy chicken with exotic pineapple salsa from Thailand.

Ingredients

  • 4 chicken breast fillets
  • 1 pineapple
  • 1 red onion
  • 1 red bell pepper
  • 1 red chili
  • fresh coriander
  • salt and pepper
  • olive oil

Preparation

  • Wash the chicken, pat dry, and season with salt and pepper
  • Heat olive oil in a pan and brown the chicken breast fillets on both sides until golden brown
  • Peel and chop the pineapple, dice the onion and bell pepper, finely chop the chili
  • Mix all the ingredients for the salsa and season with salt, pepper, and fresh coriander
  • Serve the cooked chicken with the exotic pineapple salsa
