Crispy chicken with exotic pineapple salsa from Thailand
Ingredients
- 4 chicken breast fillets
- 1 pineapple
- 1 red onion
- 1 red bell pepper
- 1 red chili
- fresh coriander
- salt and pepper
- olive oil
Preparation
- Wash the chicken, pat dry, and season with salt and pepper
- Heat olive oil in a pan and brown the chicken breast fillets on both sides until golden brown
- Peel and chop the pineapple, dice the onion and bell pepper, finely chop the chili
- Mix all the ingredients for the salsa and season with salt, pepper, and fresh coriander
- Serve the cooked chicken with the exotic pineapple salsa
