Delicious pea soup with tender ham - a Canadian recipe.
Pea Soup
Ingredients:
- 1 kg soaked ham
- 200 g peas
- 2 onions, chopped
- 2 carrots, chopped
- 2 bay leaves
- 1 celery, chopped
- 300 g frozen peas
- Bread for serving
Preparation:
- Place the ham in a very large pot with 2 liters of water and bring to a boil.
- Remove from the heat and drain the water - this helps to reduce the salt content.
- Refill with 2 liters of cold water and bring to a boil again.
- Add everything except the frozen peas to the pot and bring to a boil.
- Reduce to low heat and simmer for 12 hours, replenishing water as needed to maintain the liquid level.
- When the ham is tender enough to shred into fibers, it is done.
- Remove the ham from the pot, peel off the skin, and discard.
- Shred the meat into strips while still hot, using rubber gloves.
- Remove the bay leaves from the soup and stir in the frozen peas.
- Simmer for 1 minute, then puree until smooth.
- Add some water if the soup is too thick, and reheat if necessary if it has cooled or if you are preparing it in advance.
- If serving, mix the hot soup with most of the ham and reheat if necessary.
- Serve in bowls and sprinkle the remaining ham on top. Serve with crispy bread and butter.
