Breakfast Potatoes
Preparation
First, freeze the bacon slices. This will make chopping the bacon much easier during preparation.
Wash the potatoes and cut them into medium-sized cubes. To prevent browning, place the already cut potatoes in a bowl of water.
In the meantime, heat 1-2 tablespoons of olive oil in a large pan over medium to high heat. Tilt the pan slightly to evenly distribute the oil.
Once the oil is hot, drain the potatoes and add them to the pan. Season with salt, pepper, and desired amount of Old Bay seasoning.
Cook for 10 minutes, stirring regularly, until the potatoes are brown. Add another tablespoon of oil if necessary.
Chop the bacon and add it to the potatoes. The bacon will render and the fat will start to cook the potatoes further. Mix well. The bacon will take 5-6 minutes to become crispy.
Once the bacon is cooked, reduce the heat to medium-low, add the chopped garlic, and mix. Season again and add dried or fresh parsley. Adjust the heat as needed.
Allow the garlic to simmer until fragrant, about one minute.
Just before serving, drizzle maple syrup over the potatoes and mix. Let it cook for another minute to give the potatoes a caramelized effect.

- Maple syrup to taste
- Chopped parsley for garnish
